There is famous sake in the land of Sanshi Suimei
Water is one of the most important things in sake brewing.
The tap water in Maebashi City, Akagi Nanrei, is subterranean water from Akagisan, and water drawn from the source is so famous that it is sold locally. It has a slight mineral taste which spreads across the mouth upon drinking.
At Kondoshuzo, which was founded in Meiji 8, we make full use of the climate of Akagisan and its bountiful water to producing our "refined Akagisan," filled with our passion and watched over by the mountain.

I want to protect our farmers and hometown
Idle farmland is increasing due to depopulation, labor shortages, and sluggish consumption and prices.
In order to improve, it is necessary to find new demand and value, and establish a system that reconnects with the use of farmland. With this as a local project, we are cultivating sake rice with the aim of "preserving the rich farmland and passing it on to the next generation", making local sake with that sake rice, and striving to revitalize "paddy fields that create added value". In addition, Mr. Tomihiro Hoshino, a poet and painter from Midori-shi, provided us with design drawings, and we are also working on brewing sake that is all Gunma and local Midori-shi.

History of Midori-shi

Watarase Valley Railway
Midori-shi, located in the eastern part of Gunma, is surrounded by 7 cities such as Kiryu City and Nikko City in Tochigi Prefecture, and has many tourist attractions.
Enjoy the beautiful valleys and clear streams of the Watarase River on the "Watarase Valley Railway” and the “Akagane Highway” that prospered with the Ashio Copper Mine.
It is also blessed with a wealth of tourism resources, such as the Iwajuku Ruins, which marked a turning point in Japanese history, the Takatsuto Gorge, which is praised as the "Yabakei Valley of Kanto," and the Tomihiro Museum of Art, which exhibits poetry and paintings by Tomihiro Hoshino. This is Midori-shi.

Sake Brewing
We will guide you through the process of making sake Akagisan and how it is brewed.

How Akagisan is Made

1. Rice Polishing/Washing/Soaking

Rice polishing, washing, soaking
First, the brown rice is polished.
For regular sake, the rice is polished about 65%, and for daiginjo, about 35%.
After that, the white rice is washed with Akagisan underground water to remove the bran and soaked in water.

2. Steaming

After draining the white rice, we steam it for 40-60 minutes.

3. Making Koji

We spread out the steamed rice, let it cool down, and inoculate it with koji mold.

4. Making Shubo

The koji and steamed rice are put into Akagisan underground water and yeast is added to make shubo.

5. Making Moromi

Moromi making
Koji, steamed rice and Akagisan underground water are added to the shubo and fermented for about a month.

6. Extracting

The aged moromi is separated into new sake and sake lees.

7. Pasteurizing

Burning
The new sake that has just been separated is cloudy, so it needs to be filtered.
After that, the filtered sake (raw sake) is heat sterilized at around 65℃.

8. Preparation/Blending

After pasteurization, the stored (raw) sake is left to rest for about half a year.
After storage, the sake in several tanks is blended to adjust the quality of the sake.

9. Pasteurization/Bottling

After further filtration, water is added to adjust the alcohol content.
After being pasteurized again, it is bottled, rapidly cooled and shipped.

Kondoshuzo and Akagisan
-History-
In Meiji 8 (1875), our founder Katsuyoshi Kondo began a sake brewing business named "Tanaka-ya" in Oma Town, Gunma, and devoted himself to using the underground springs as water for a line of dry sake.
He sold it under the name "Akagi" due to being located at the base of the mountain Akagisan. Later the name was changed to "Akagi Masamune", and in the third generation was again changed to "Akagisan" to match Meigetsu Akagisan, due to a love of the moon.
 The water from the base of Akagisan is perfect for making tanrei, dry sake. This sake is so beloved in the local area that it is called "the men's sake Akagisan Dry" when served hot and "Akagisan Namachozo-shu" when served cold.
